Vegan Dan Dan Noodles

Ingredients:

 Chilli Oil

  • 100ml olive oil

  • 1 tbsp sichuan peppercorns

  • 1 tbsp red chilli flakes

  • 1 tbsp sesame seeds

 Dan Dan Sauce

  • 75g tahini

  • 1 tbsp Hoisin sauce

  • 1 tbsp soy sauce

  • 1 tbsp Chinese black vinegar

  • 1 tbsp rice sirop

  • 1 tbsp sesame oil

  • 1 tsp Chinese five-spice

  • 1 clove garlic, finely grated

  • 1 tbsp ginger, finely grated

  • 6 spring onions, thinly sliced

  • 25g peanuts, finely chopped

  • 20g coriander, finely chopped

  • 400g udon noodles

Instructions:

  1. Following the instructions on the packaging, place 1 pack of Gorilla Food You’re So Beefy into a mixing bowl. Then add 240ml cold water and 20ml vegetable oil, mix really well and let it sit for 15 minutes until fully hydrated.
  2. Then add the Hoisin sauce, Chinese black vinegar and soy sauce to the mixing bowl, stir through to combine and set aside.

 

Chilli Oil

  1. Place a saucepan on low heat then add the olive oil and sichuan peppercorns. 
  2. Warm the oil gently then add the chilli flakes and sesame seeds.
  3. Remove the saucepan from the heat and allow the chilli oil to cool.

 

Dan Dan Sauce

  1. In a bowl whisk together the tahini, Hoisin sauce, soy sauce, Chinese black vinegar, honey, sesame oil, Chinese five-spice, garlic and ginger.
  2. Fill a saucepan with water and place on a high heat.
  3. Bring the water to a boil then add the udon noodles, cook according to packet instructions, approximately 3 minutes for fresh noodles or 8 minutes for dried.
  4. Meanwhile, place a saute pan on medium heat and add the seasoned Gorilla Food.
  5. Saute the plant based mixture for 3 minutes then pour in the Dan Dan sauce.
  6. Next add the udon noodles and stir through to combine with the sauce, allow the sauce to thicken for 1 minute, adjust with water if needed.
  7. Serve the Dan Dan noodles topped with spring onions, peanuts, chopped coriander and the homemade chilli oil.
