Vegan Chicken Larb Salad with Rice Vermicelli

Ingredients:

  • 1 pack Gorilla Food Don’t Chicken out on me
  • 200ml cold water
  • 40ml vegetable oil
  • 2 tbsp peanut oil
  • 2 carrots, sliced in matchsticks
  • 1 red onion, thinly sliced
  • 6 radish, thinly sliced
  • 25g coriander, finely chopped
  • 10g mint, finely chopped
  • 200g rice vermicelli
  • 50g peanuts, roughly chopped
  • 1 lime, quartered

 

Thai Dressing

  • 1 cloves garlic, finely grated
  • 1-inch ginger, finely grated
  • 1 red chilli, finely chopped
  • 2 tbsp vegan fish sauce
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 lime, juiced
  • 2 tsp palm sugar
  • 1 tbsp sesame seeds

Instructions:

  1. Following the instructions on the packaging, place 1 pack of Gorilla Food Don’t Chicken out on me into a mixing bowl. Then add 240ml cold water and 20ml vegetable oil, mix really well and let it sit for 30 minutes until fully hydrated.
  2. In a bowl stir together the grated garlic, ginger, red chilli, vegan fish sauce, soy sauce, sesame oil, lime juice, palm sugar and sesame seeds to create the Thai dressing, set aside.
  3. Into a separate mixing bowl add the rice vermicelli, then pour boiling water over the noodles to cover. Allow the vermicelli to cook for 3 minutes until tender then strain and place into a bowl.
  4. Set a saute pan on medium heat then add the peanut oil.
  5. Stir the plant-based meat into the pan and cook for 3 minutes to brown.
  6. Then add the carrots, red onion, rice vermicelli and Thai dressing, toss to bring all the ingredients together and warm through for 1 minute.
  7. Serve the larb salad topped with sliced radish, coriander, mint, crushed peanuts and an extra squeeze of lime juice.
